  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth (Halal)
  • 1 can diced tomatoes
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup corn (optional)
  • Fresh cilantro for garnish (optional)

Cooking Steps
  1. Begin by heating a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
  2. Next, add the chopped onion and minced garlic to the pot. Cook for 2-3 minutes, or until the onion becomes translucent and fragrant.
  3. Toss in the diced potatoes and pour in the beef broth, making sure the potatoes are fully submerged. Bring the mixture to a gentle boil.
  4. Stir in the diced tomatoes, chili powder, cumin, and season with salt and pepper. Reduce the heat and let it simmer for about 20-25 minutes, or until the potatoes are tender.
  5. In the last 5 minutes of cooking, add the optional corn.
  6. Once everything is cooked through, ladle the soup into bowls, garnish with fresh cilantro, and enjoy.

Notes

For a vegetarian version, substitute ground beef with lentils or plant-based protein and use vegetable broth. You can add additional vegetables like bell peppers or zucchini for more nutrition.
