Cooking Steps
- Begin by heating a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
- Next, add the chopped onion and minced garlic to the pot. Cook for 2-3 minutes, or until the onion becomes translucent and fragrant.
- Toss in the diced potatoes and pour in the beef broth, making sure the potatoes are fully submerged. Bring the mixture to a gentle boil.
- Stir in the diced tomatoes, chili powder, cumin, and season with salt and pepper. Reduce the heat and let it simmer for about 20-25 minutes, or until the potatoes are tender.
- In the last 5 minutes of cooking, add the optional corn.
- Once everything is cooked through, ladle the soup into bowls, garnish with fresh cilantro, and enjoy.
Notes
