  • 4 medium-sized carrots, sliced
  • 3 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth (halal-friendly)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce (halal version)
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish

Preparation
  1. Chop the onions, carrots, and potatoes. Mince the garlic and set aside.
Searing Beef
  1. In a large skillet, heat a bit of oil over medium-high heat and sear the beef chunks on all sides until browned. This step adds depth to the flavor.
Layer Ingredients
  1. Place the seared beef (or raw if you prefer) in the crock pot. Add the carrots, potatoes, and onions. Follow with the minced garlic.
Mix Broth
  1. In a separate bowl, combine the beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary. Stir until well mixed.
Pour and Season
  1. Pour the broth mixture over the ingredients in the crock pot. Add salt and pepper to taste, making sure everything is well seasoned.
Cooking
  1. Cover your crock pot and set it to low for 8 hours or high for 4 hours. Resist the urge to lift the lid too often!
Serving
  1. Once cooked, give the stew a final stir, adjust seasoning if necessary, and serve hot. Garnish with fresh parsley if you like!
