Preparation
- Preheat your oven to 375°F (190°C) and line your baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking soda, and baking powder. Set aside.
- In a large mixing bowl, beat the softened butter and white sugar together until light and fluffy, about 2-3 minutes.
- Beat in the egg, vanilla extract, and almond extract into the butter-sugar mixture until fully combined.
- Gradually mix the dry ingredients into the wet mixture until fully integrated.
- Divide the dough into smaller portions, add different flavored Jello mixes to each portion, and knead until well incorporated.
- Scoop tablespoon-sized portions of dough and form them into balls. Place them on the prepared baking sheets.
Baking
- Bake for 10 to 12 minutes or until the edges start to turn golden. Allow to cool on the sheets for a few minutes before transferring to a wire rack.
Notes
For a healthier option, consider replacing half of the all-purpose flour with whole wheat flour. Rolling the dough balls in granulated sugar before baking adds an extra crunch. Store in an airtight container at room temperature for up to one week or freeze for up to three months.
