Preparation
  1. Start by washing and dicing the red onions and green bell peppers.
  2. If you’re using fresh corn, cook and cut the kernels off the cob.
Mix the Base
  1. In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise.
  2. Use a hand mixer or a sturdy spoon to blend until smooth and creamy.
Add Flavor
  1. Incorporate the corn, diced onions, bell peppers, and chopped cilantro into the cream mixture.
  2. Squeeze in the juice of one lime, then season with salt and pepper to taste.
  3. Stir until everything is evenly mixed.
Chill
  1. Cover the dip with plastic wrap and refrigerate for about 30 minutes.
Serve
  1. After chilling, give it another quick stir and serve alongside your favorite tortilla chips.

Notes

For substitutions, swap bell peppers for jalapeños for some heat, or use Greek yogurt in place of sour cream for a healthier option. Don't skip the lime juice for brightness!
