Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and sugar until fluffy (2-3 minutes). Add the eggs, vanilla extract, and cooled coffee, and mix well.
- In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until the dough is combined and moist.
- Using a cookie scoop or spoon, take a tablespoonful of dough, roll it into a ball, and coat it in powdered sugar before placing on the prepared baking sheet.
Baking
- Bake in the preheated oven for 10-12 minutes until the tops are crinkled and set.
- Remove from the oven and allow to cool for 5 minutes on the baking sheet before transferring to a wire rack.
