  • 1 cup strong brewed coffee (cooled) Use decaffeinated if preferred.
  • 1/2 cup butter, softened Can substitute with a plant-based alternative.
  • 1 cup sugar Ensure it is Halal certified if needed.
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups all-purpose flour Can substitute with gluten-free flour blend.
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
For Dusting
  • Powdered sugar For rolling the cookies.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and sugar until fluffy (2-3 minutes). Add the eggs, vanilla extract, and cooled coffee, and mix well.
  3. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir until the dough is combined and moist.
  5. Using a cookie scoop or spoon, take a tablespoonful of dough, roll it into a ball, and coat it in powdered sugar before placing on the prepared baking sheet.
Baking
  1. Bake in the preheated oven for 10-12 minutes until the tops are crinkled and set.
  2. Remove from the oven and allow to cool for 5 minutes on the baking sheet before transferring to a wire rack.

  1. Serve warm for the best experience.
