Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Beat in the egg, followed by the vanilla extract and cooled brewed coffee until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Gently fold in the chocolate chips.
Baking
- Using a cookie scoop or spoon, drop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are slightly golden and the centers appear set.
- Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to a week. Can be frozen for up to three months. Reheat cookies in the microwave or oven for a fresh taste.
