Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup brewed coffee (cooled)
Mix-ins
  • 1 cup chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the egg, followed by the vanilla extract and cooled brewed coffee until well combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Gently fold in the chocolate chips.
Baking
  1. Using a cookie scoop or spoon, drop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
  2. Bake for 10-12 minutes or until the edges are slightly golden and the centers appear set.
  3. Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. Can be frozen for up to three months. Reheat cookies in the microwave or oven for a fresh taste.
