Preparation
- Preheat the oven to 350°F (175°C). Line your baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- Gradually add the flour mixture to the wet mixture, alternating with sour cream. Mix until just combined; don’t overmix.
- In another small bowl, combine the brown sugar, cinnamon, and optional chopped nuts for the topping.
Baking
- Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheets.
- Sprinkle the brown sugar mixture over each cookie before baking.
- Bake in the preheated oven for 10-15 minutes or until the edges are golden and the centers are set.
Cooling
- Allow the cookies to cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
Notes
For a vegan option, substitute with coconut oil or a dairy-free butter. Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months.
