Preparation
- Preheat your oven to 350°F (175°C) and grease a baking pan (8x8 inches).
- In a bowl, cream together the sugar and softened butter until the mix is light and fluffy.
- Add the eggs, one at a time, ensuring they are fully blended before introducing the next. Add the vanilla extract and stir until combined.
- Sift the dry ingredients: cocoa powder, flour, salt, and baking powder into the mixture. Fold gently.
- Stir in the brewed coffee until just combined.
- Gently fold in the chocolate chips to give those lovely pockets of gooey chocolate throughout.
- Pour the batter into the prepared pan and spread it evenly.
Baking
- Bake for 20-25 minutes or until the edges start to pull away from the pan.
- Let cool before frosting.
Notes
Use freshly brewed coffee for the best flavor. Don’t overmix the batter to maintain a fudgy texture. Add nuts or chocolate chunks for a twist.
