  • 1/2 cup fresh lime juice Juice from fresh limes is preferred.
  • 1/4 cup honey or sweetener of choice Agave syrup or maple syrup can be alternatives.
  • 1 whole lime (zest only) Use a microplane to zest the lime.

  1. Gather your materials: Ensure you have all the ingredients handy, along with your blender and popsicle molds.
  2. Blend the ingredients: In your blender, combine 2 cups of coconut milk, 1/2 cup of fresh lime juice, 1/4 cup of honey (or your preferred sweetener), and the zest of 1 lime. Blend until smooth and creamy.
  3. Taste test: Taste the mixture and adjust the sweetness or lime level based on your preference.
  4. Pour into molds: Carefully pour the mixture into your popsicle molds, leaving space at the top.
  5. Insert sticks: If your molds come with sticks, insert them now; otherwise, wait 45 minutes and then insert regular popsicle sticks.
  6. Freeze: Freeze for at least 4-6 hours or until fully frozen.
  7. Enjoy: To remove your popsicles, let them sit at room temperature for a couple of minutes or run warm water over the mold.

Notes

Store in an airtight container for up to 3 months. No need to reheat; just let them thaw a little for easy removal.
