  • 1 cup heavy cream
  • 3/4 cup sugar
  • 1/4 cup lime juice
  • 1 unit zest of 1 lime
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Preparation
  1. In a large mixing bowl, whisk together the coconut milk, heavy cream, sugar, lime juice, lime zest, vanilla extract, and a pinch of salt until the sugar dissolves completely.
  2. Cover the bowl with plastic wrap and refrigerate for at least 2 hours to enhance the flavors and create a creamier ice cream.
Churning
  1. Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions, typically around 20-25 minutes.
  2. Once churned, transfer the ice cream to an airtight container and freeze for at least 4 hours, or until firm.
Serving
  1. After freezing, remove from the freezer, let it sit for a few minutes to soften, then scoop into bowls. Feel free to sprinkle your favorite toppings!

Notes

To store your ice cream, keep it in an airtight container in the freezer. It can last up to 2 weeks. Remove from the freezer about 10 minutes before serving for easier scooping. You can also try adding chocolate shavings or fresh fruit for added flavor.
