Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup powdered sugar
  • 1/2 cup butter, softened
For the filling
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup lime juice
  • 1 tablespoon lime zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8-inch baking dish with butter or line it with parchment paper.
Crust
  1. In a large mixing bowl, combine all-purpose flour, shredded coconut, powdered sugar, and softened butter. Mix until crumbly.
  2. Press the mixture into the bottom of the prepared baking dish.
  3. Bake for about 15 minutes or until lightly golden.
Filling
  1. In another bowl, whisk together eggs, granulated sugar, lime juice, lime zest, baking powder, and salt until well combined.
  2. Pour the lime filling over the baked crust.
  3. Bake for an additional 20-25 minutes, or until the filling is set and slightly golden around the edges.
Cooling and Serving
  1. Allow the bars to cool in the pan before cutting them into squares.
  2. Dust with additional powdered sugar before serving.

Notes

Store in an airtight container in the refrigerator for up to one week. They can also be frozen for up to three months.
