Ingredients
  

For the pastry
  • 200 g plain flour
  • 125 g unsalted butter, softened
  • 50 g icing sugar
For the custard
  • 250 ml milk
  • 250 ml fresh cream
  • 120 g granulated sugar
  • 3 large egg yolks
  • 2 tbsp cornstarch
  • 1 tsp pure vanilla extract
For finishing
  • 1 tbsp powdered sugar (for dusting)

Method
 

Preparation of Pastry
  1. Preheat your oven to 180°C (350°F). In a mixing bowl, combine the flour, icing sugar, and softened butter. Blend until the mixture is crumbly.
  2. Press the dough into the bottom of a lined square baking dish. Bake for about 15 minutes or until lightly golden. Allow to cool.
Preparation of Custard
  1. In a saucepan, heat the milk and cream over medium heat until it starts to steam, but do not boil.
  2. In a separate bowl, whisk together the egg yolks, granulated sugar, and cornstarch until smooth. Gradually whisk in the hot milk and cream mixture, stirring continuously.
  3. Return to the saucepan and cook over medium heat until the mixture thickens, stirring constantly for about 5-7 minutes. Add the vanilla extract and mix well.
Assembly
  1. Pour the custard mixture over the cooled pastry layer in the dish and spread it evenly.
  2. Place back in the refrigerator and let it chill for at least 2 hours to set.
Finishing Touches
  1. Once fully set, dust with powdered sugar before serving, and slice into squares or rectangles.

Notes

For best results, store the vanilla slice in the refrigerator for up to three days. Avoid leaving it at room temperature for an extended period. Consider experimenting with flavors by infusing the milk with lemon zest or almond extract.
