Preparation
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.
- In another bowl, beat the eggs, then add the milk and vanilla extract. Mix well until fully combined.
- Gradually pour the wet ingredients into the dry ingredients, stirring until a soft dough forms. Be careful not to over-mix!
- Cover the bowl with a clean kitchen towel and let it rest for about 15-20 minutes.
- While the dough is resting, heat the vegetable oil in a deep pan over medium heat until it reaches 350°F (175°C).
Cooking
- Turn the rested dough out onto a lightly floured surface and roll it out to about 1/2 inch thickness. Cut the dough into squares (2-3 inches).
- Carefully drop the dough squares into the hot oil, frying a few at a time for about 2-3 minutes on each side or until golden brown.
- Remove the beignets from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
- While still warm, dust generously with powdered sugar.
Serving
- Serve the beignets warm and enjoy with loved ones!
Notes
For substitutions, you can use almond milk or any non-dairy alternative. Fry beignets in small batches to ensure even cooking and avoid over-mixing the dough for best results. If storing, keep in an airtight container for up to 3 days or freeze for up to 2 months. Reheat in the oven at 350°F for 5-10 minutes.
