  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract

  • for dusting Powdered sugar

Method
 

Preparation
  1. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.
  2. In another bowl, beat the eggs, then add the milk and vanilla extract. Mix well until fully combined.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring until a soft dough forms. Be careful not to over-mix!
  4. Cover the bowl with a clean kitchen towel and let it rest for about 15-20 minutes.
  5. While the dough is resting, heat the vegetable oil in a deep pan over medium heat until it reaches 350°F (175°C).
Cooking
  1. Turn the rested dough out onto a lightly floured surface and roll it out to about 1/2 inch thickness. Cut the dough into squares (2-3 inches).
  2. Carefully drop the dough squares into the hot oil, frying a few at a time for about 2-3 minutes on each side or until golden brown.
  3. Remove the beignets from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  4. While still warm, dust generously with powdered sugar.
Serving
  1. Serve the beignets warm and enjoy with loved ones!

Notes

For substitutions, you can use almond milk or any non-dairy alternative. Fry beignets in small batches to ensure even cooking and avoid over-mixing the dough for best results. If storing, keep in an airtight container for up to 3 days or freeze for up to 2 months. Reheat in the oven at 350°F for 5-10 minutes.
