Preparation
- Rinse the uncooked rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed rice and 1 cup of water. Bring it to a boil, then reduce the heat, cover, and simmer for about 15 minutes until the water is absorbed.
Cooking
- Gradually stir in the whole milk, sugar, and salt into the cooked rice. Bring the mixture to a gentle simmer over medium heat.
- Continue to cook, stirring frequently for about 20 minutes or until the pudding thickens to your liking.
- Once thickened, remove from heat and mix in the vanilla extract and ground cinnamon.
- Spoon the rice pudding into individual bowls and sprinkle extra cinnamon on top. Serve warm or chilled based on preference.
Notes
For best results, use short or medium-grain rice. Adjust sugar according to taste, and consider adding nutmeg or raisins for different flavors. Store in an airtight container for up to 5 days. Reheat gently to preserve texture.
