  • 4 cups whole milk (or almond milk for dairy-free) Use whole milk for creaminess.
  • ¾ cup sugar Adjust according to sweetness preference.
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon Plus extra for topping.
  • ¼ teaspoon salt

Method
 

Preparation
  1. Rinse the uncooked rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice and 1 cup of water. Bring it to a boil, then reduce the heat, cover, and simmer for about 15 minutes until the water is absorbed.
Cooking
  1. Gradually stir in the whole milk, sugar, and salt into the cooked rice. Bring the mixture to a gentle simmer over medium heat.
  2. Continue to cook, stirring frequently for about 20 minutes or until the pudding thickens to your liking.
  3. Once thickened, remove from heat and mix in the vanilla extract and ground cinnamon.
  4. Spoon the rice pudding into individual bowls and sprinkle extra cinnamon on top. Serve warm or chilled based on preference.

Notes

For best results, use short or medium-grain rice. Adjust sugar according to taste, and consider adding nutmeg or raisins for different flavors. Store in an airtight container for up to 5 days. Reheat gently to preserve texture.
