Ingredients

Filling ingredients
  • 1 3/4 cups pumpkin puree
  • 1 cup heavy cream
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
Crust
  • 1 prepared pie crust (store-bought or homemade)

Method

Preparation and Baking
  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine the pumpkin puree, heavy cream, sugar, salt, and spices (cinnamon, ginger, nutmeg). Stir until smooth.
  3. Add the eggs into the pumpkin mixture one at a time, blending thoroughly until smooth.
  4. Place the prepared pie crust into a pie dish, ensuring it's evenly distributed.
  5. Carefully pour the pumpkin mixture into the prepared pie crust.
  6. Bake for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 40-45 minutes, or until a knife inserted in the center comes out clean.
  7. Allow the pie to cool for at least 2 hours before serving.

Notes

Sugar substitutes can include honey or maple syrup; adjust spices as desired. To avoid a soggy crust, consider baking crust alone for 10 minutes before adding filling. Store leftovers in the refrigerator for 4-5 days or freeze for 2 months.
