  • 4 cups beef broth Use halal beef broth.
  • 2 large potatoes, peeled and diced
  • 2 large carrots, sliced
  • 1 medium onion, chopped
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Preparation
  1. Begin by chopping the onions, garlic, potatoes, and carrots into bite-sized pieces.
Cooking the Beef
  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the beef cubes and season with salt and pepper. Sear until golden brown on all sides, then remove the beef and set it aside.
Sautéing Aromatics
  1. In the same pot, add the chopped onions and garlic. Cook until translucent and aromatic—about 3-4 minutes.
Combining Ingredients
  1. Return the beef to the pot, followed by the diced potatoes, carrots, beef broth, cumin, oregano, and the bay leaf.
  2. Stir well to combine.
Simmering
  1. Bring the mixture to a gentle boil, then reduce the heat and cover the pot. Allow it to simmer for 1.5 to 2 hours.
  2. Stir occasionally and check if the beef is tender enough.
Final Touches
  1. Before serving, taste the stew and adjust the seasoning as needed.
  2. If you like a little spice, feel free to add some crushed red pepper flakes!
  3. Ladle the stew into bowls and garnish with fresh cilantro.
