Ingredients

Filling Ingredients
  • 6-8 pieces fresh peaches, peeled, pitted, and sliced Use ripe peaches for best flavor.
  • 3/4 cup granulated sugar Adjust based on peach sweetness.
  • 1/4 cup all-purpose flour Thickens the pie filling.
  • 1/2 teaspoon ground cinnamon Can substitute with nutmeg for variation.
  • 1 tablespoon lemon juice Enhances flavor and balances sweetness.
  • 1 tablespoon butter For dotting on top of filling.
Crust Ingredients
  • 1 piece prepared pie crust Store-bought or homemade.
  • 1 piece egg, beaten For egg wash; optional.

Method

Preparation
  1. Prep the peaches by peeling, pitting, and slicing them. Toss in a bowl with sugar, flour, cinnamon, and lemon juice. Let them sit for 10-15 minutes.
  2. Preheat your oven to 425°F (220°C).
  3. Lay half of the pie crust into a 9-inch pie pan, pricking the bottom lightly with a fork.
  4. Pour the peach mixture into the crust evenly and dot with butter.
  5. If using a second crust, lay it on top and cut slits for steam to escape, or create a lattice top. Seal and crimp the edges.
  6. Brush the top crust with the beaten egg for a golden finish.
Baking
  1. Bake in the preheated oven for 45-50 minutes until the crust is golden and the filling is bubbly.
  2. Allow to cool for at least 2 hours before serving.
