Method
 

Preparation of Pastry
  1. In a large mixing bowl, combine the flour and salt.
  2. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add cold water, mixing until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Making the Filling
  1. In a large skillet over medium heat, cook the chopped onion and minced garlic until softened.
  2. Add the ground beef and cook until browned. Drain excess fat if necessary.
  3. To the beef mixture, add the beef broth, Worcestershire sauce, dried thyme, and season with salt and pepper. Stir and simmer for about 10 minutes.
Assembling the Pie
  1. Preheat your oven to 400°F (200°C).
  2. On a lightly floured surface, roll out the chilled pastry dough. Use half to line a pie dish, leaving some hanging over the edges.
  3. Spoon the meat filling into the pastry-lined dish.
  4. Roll out the other half of the pastry to create the top crust, sealing the edges. Make small slits in the top for steam to escape.
Baking the Pie
  1. Bake in the preheated oven for about 30-35 minutes, or until the crust is golden brown.
  2. Let it cool slightly before serving.

Notes

For best results, chill your butter and do not overwork the dough. Feel free to experiment with fillings by adding vegetables such as carrots or peas.
