Preparation
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the graham cracker crumbs with melted unsalted butter and stir until sandy. Press firmly into the bottom of a 9-inch springform pan to form the crust.
- Bake the crust for 10 minutes, then set aside to cool.
Mixing the Filling
- In a large bowl, combine ricotta cheese, granulated sugar, and salt. Blend until smooth using an electric mixer.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and lemon zest.
Baking
- Pour the strong filling over the cooled crust in the springform pan.
- Bake in the preheated oven for about 40-45 minutes, until the center is set but slightly jiggly. A toothpick inserted should come out clean.
Cooling and Serving
- Allow the cheesecake to cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
- Remove the sides of the springform pan, slice into wedges, and serve with toppings of your choice.
Notes
Store leftovers covered in the fridge for up to 5 days or freeze wrapped for up to 3 months. Reheat slices gently in the microwave for a creamy texture.
