For the Torte
  • 4 oz unsalted butter, softened Ensure butter is at room temperature for best results.
  • 1 cup sugar
  • 2 large eggs Beat in one at a time.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4-6 plums, pitted and sliced Use other stone fruits if plums are out of season.
  • for dusting Powdered sugar Dust before serving.

Method
 

Preparation
  1. Begin by preheating your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a mixing bowl, combine the softened butter and sugar. Mix until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the butter mixture, mixing until just combined.
  5. Pour the batter into the prepared pan and smooth the top. Gently place the sliced plums on top of the batter.
Baking
  1. Place the pan in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the torte to cool in the pan for about 10 minutes before gently removing it. Dust with powdered sugar before serving.

Notes

For optimal results, ensure butter is at room temperature and start checking for doneness at 30 minutes. This torte can be stored in an airtight container for up to 3 days or refrigerated for up to a week. Slices can be reheated to enjoy fresh flavor.
