  • 4 pieces boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 1 piece onion, diced
  • 4 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 teaspoons dried thyme
  • 1/4 cup olive oil

Preparation
  1. Preheat your oven to 400°F (200°C). Chop the onions, garlic, and herbs, and halve the cherry tomatoes.
Cooking
  1. Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper, then add to the skillet and sear for about 5 minutes until golden brown.
  2. Flip the chicken and add diced onion and minced garlic. Sauté for 2-3 minutes until the onions begin to soften.
  3. Scatter halved cherry tomatoes over the chicken, then sprinkle with chopped basil, parsley, and dried thyme.
  4. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the tomatoes are bubbling.
  5. Remove from the oven, let cool for a few minutes, and serve the chicken on a platter, drizzling the pan juices over it and garnishing with additional fresh herbs if desired.

Notes

For herb substitutions, use oregano or cilantro. Avoid overcrowding the skillet to ensure chicken sears properly. Store leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
