Preparation
- If you’re using fresh cherries, rinse and pit them first. Frozen cherries should be thawed and pitted.
- In a saucepan over medium heat, mix the cherries, sugar, cornstarch, lemon juice, and vanilla extract. Stir gently until the mixture begins to thicken (about 7-10 minutes).
- Once thickened and glossy, remove from heat and allow to cool at room temperature for about 10-15 minutes.
Assembly
- Layer the cooled cherry mixture evenly across the prepared pie crust or graham cracker crust.
- Top the cherry layer with whipped cream or Cool Whip, spreading gently to cover all cherries.
- Refrigerate for at least 1 hour to set properly before serving. Cut into slices and serve.
Notes
This dessert can be stored in an airtight container in the refrigerator for up to 3-4 days. For longevity, freeze the cherry filling separately from the crust and Cool Whip. Thaw overnight in the fridge before assembling.
