Ingredients
  

Dry Ingredients
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 ½ cups white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract Can substitute with additional vanilla extract.
Coating
  • to taste additional sugar for rolling

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
Mixing
  1. In another bowl, cream together the softened butter and white sugar until light and fluffy (about 4-5 minutes).
  2. Beat in the egg, vanilla extract, and almond extract until fully incorporated.
  3. Gradually add in the dry ingredients, mixing until just combined.
Shaping and Baking
  1. Scoop tablespoons of dough and roll them into balls. Roll each into the additional sugar to coat.
  2. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  3. Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden.
  4. Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, measure flour accurately to avoid dry cookies. Store in an airtight container at room temperature for up to a week or freeze layered with parchment paper. Thaw at room temperature or microwave for a few seconds to warm up.
