Ingredients
  

Muffin Batter
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 large egg
  • ¾ cup milk
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
Topping
  • ¼ cup granulated sugar For topping
  • 1 teaspoon ground cinnamon For topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon.
  3. In a separate bowl, beat the egg and then add the milk, melted butter, and vanilla extract. Mix until smooth.
  4. Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  5. Scoop the batter into the prepared muffin tin, filling each cup about ⅔ full.
  6. In a small bowl, mix together the sugar and cinnamon for the topping. Sprinkle generously over the batter.
Baking
  1. Place the muffin tin in the oven and bake for 15-20 minutes until golden brown and a toothpick comes out clean.
  2. Allow to cool slightly before enjoying!

Notes

For perfect muffins, don’t overmix the batter and always use fresh ingredients. Experiment with flavors by adding nuts, raisins, or chocolate chips!
