Preparation
- Preheat your oven to 350°F (175°C) to ensure even baking.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add in the eggs one at a time, followed by the vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon until evenly distributed.
- Gradually mix the dry ingredients into the wet mixture, combining until just incorporated.
- In a small bowl, mix together the remaining sugar and cinnamon for the coating.
- Scoop out a tablespoon of dough, roll it into a ball, and roll it in the cinnamon-sugar mixture to coat thoroughly.
- Place the coated balls on a lined baking sheet, spacing them about 2 inches apart.
Baking
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Notes
For an extra boost of flavor, consider adding a pinch of nutmeg or substituting half of the all-purpose flour with whole wheat flour. Store the cookies in an airtight container to keep them soft. They also make great gifts when packaged nicely.
