  • 1 cup butter, softened Make sure it's room temperature for easy mixing.
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs Room temperature for better mixing.
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons cinnamon
  • 1/4 cup sugar for coating

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add in the eggs one at a time, followed by the vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and cinnamon until evenly distributed.
  5. Gradually mix the dry ingredients into the wet mixture, combining until just incorporated.
  6. In a small bowl, mix together the remaining sugar and cinnamon for the coating.
  7. Scoop out a tablespoon of dough, roll it into a ball, and roll it in the cinnamon-sugar mixture to coat thoroughly.
  8. Place the coated balls on a lined baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

For an extra boost of flavor, consider adding a pinch of nutmeg or substituting half of the all-purpose flour with whole wheat flour. Store the cookies in an airtight container to keep them soft. They also make great gifts when packaged nicely.
