Ingredients

Muffin Batter
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup milk
Cinnamon Sugar Topping
  • 2 tsp ground cinnamon
  • 1/4 cup granulated sugar (for topping)

Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Line a muffin tin with paper liners or spray with non-stick cooking spray.
Making the Muffin Batter
  1. In a mixing bowl, combine the flour, baking powder, and salt.
  2. In another bowl, mix together the melted butter, sugar, egg, vanilla extract, and milk until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix!
Baking the Muffins
  1. Scoop the batter into the prepared muffin tins, filling each cup about two-thirds full.
  2. Place in the preheated oven and bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
Topping the Muffins
  1. While the muffins bake, mix the cinnamon and sugar for the topping in a small bowl.
  2. Once the muffins are out of the oven, let them cool for a few minutes, then brush the tops with melted butter and roll them in the cinnamon sugar mixture until fully coated.
  3. Allow them to cool slightly before serving, then enjoy the sweet, warm goodness!

Notes

For a dairy-free version, substitute butter with coconut oil or dairy-free margarine and use a plant-based milk alternative. Don’t overmix the batter to achieve tender muffins. Check for doneness around the 15-minute mark to prevent drying out.
