Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- Add the cold cubed butter to the flour mixture. Using a pastry cutter or your fingers, blend the butter into the flour until the mixture resembles coarse crumbs.
- Pour in the milk and mix until a soft dough forms. Be careful not to overmix; it’s okay if there are a few lumps.
- Turn the dough onto a lightly floured surface. Roll it out to about 1/2 inch thick. Cut the dough into small squares or use a cookie cutter for fun shapes.
Cinnamon Sugar Coating
- In a separate bowl, combine the sugar and cinnamon.
- As you remove each biscuit bite, toss them in the mixture to fully coat.
Baking
- Place the coated bites on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until they are lightly golden.
- Let them cool for a few minutes. Serve warm and watch them disappear!
Notes
Store any uneaten bites in an airtight container at room temperature for up to three days. Freeze leftovers in a zip-top bag for up to a month. Reheat in a preheated oven at 350°F (175°C) for 5-10 minutes.
