Preparation
- Preheat your oven to 350°F (175°C) and grease or line muffin tins with muffin liners.
- In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and 1 teaspoon of ground cinnamon.
- In another bowl, whisk together melted butter, milk, and egg until smooth.
- Pour the wet mixture into the dry ingredients and stir until just combined; avoid over-mixing.
- In a small bowl, mix brown sugar and 1 tablespoon of cinnamon to create the filling.
Baking
- Spoon a small amount of batter into each muffin cup, about 1/3 full.
- Sprinkle a teaspoon of the cinnamon filling over the batter, then cover with more batter until nearly full.
- Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack.
- If desired, drizzle cream cheese frosting over the top.
Notes
Don’t over-mix your batter; this keeps muffins fluffy. Experiment with fillings like chocolate chips or nuts for fun variations. Store in an airtight container at room temperature for up to three days, or freeze for longer storage.
