Ingredients

Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 3/4 cup milk
  • 1 large egg
  • 1 tablespoon vanilla extract
Cinnamon Filling
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon
Icing
  • 1/2 cup powdered sugar For drizzling.
  • 1-2 tablespoons milk To adjust icing consistency.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with paper liners or lightly grease it.
  3. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.
  4. In another bowl, beat together the melted butter, milk, egg, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  6. In a small bowl, mix the brown sugar and ground cinnamon together.
Filling and Baking
  1. Divide half the muffin batter into the prepared muffin tin.
  2. Sprinkle a layer of the cinnamon-sugar mixture over this layer.
  3. Add the remaining muffin batter on top, distributing it evenly.
  4. Top with the leftover cinnamon-sugar mixture.
  5. Bake in the preheated oven for 15-20 minutes, or until a toothpick comes out clean when inserted in the center.
Cooling and Icing
  1. Let the muffins cool slightly.
  2. Drizzle with a mixture of powdered sugar and milk until reaching a drizzling consistency.
