Ingredients
  

For the Muffins
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 cup milk should be at room temperature
  • cup vegetable oil
  • 1 large egg should be at room temperature
  • 1 teaspoon vanilla extract
For the Cinnamon Filling
  • ½ cup brown sugar
  • 1 tablespoon ground cinnamon
  • ¼ cup unsalted butter should be softened
For the Glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it with cooking spray.
  2. In a large bowl, combine the flour, baking powder, salt, granulated sugar, and ground cinnamon. Mix well.
  3. In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until thoroughly combined.
  4. Pour the wet mixture into the dry mixture and stir until just combined. Do not overmix; it’s okay if a few lumps remain.
  5. In a separate bowl, mix together the brown sugar, ground cinnamon, and softened butter until smooth.
Baking
  1. Fill each muffin cup about halfway with the batter, add a generous dollop of the cinnamon filling, then top with more batter until each cup is about three-quarters full.
  2. Place the muffin tin in the preheated oven and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Glazing
  1. While muffins are baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
  2. Once the muffins are baked, allow them to cool for a few minutes before drizzling the glaze over the top.

Notes

For the fluffiest muffins, use room temperature ingredients and do not overmix the batter. Customize with nuts or chocolate chips for added flavor. Store muffins in an airtight container for up to 3 days or freeze for up to 3 months.
