Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the self-rising flour and Greek yogurt. Stir until a sticky dough forms.
- Dust a clean surface with flour and transfer the dough onto it. Gently knead the dough a few times until it becomes smoother, then roll it out into a rectangle about 1/4 inch thick.
Assembly
- Using a pastry brush, spread the melted butter evenly over the dough.
- In a separate bowl, mix together the sugar and ground cinnamon, then sprinkle it generously over the buttered dough.
- Starting from one end, carefully roll the dough into a log shape, ensuring it is tight enough to contain the filling.
- Pre-cut your log into bite-sized pieces, about 1 inch thick. Place them on a parchment-lined baking tray, keeping some space between each piece.
Baking
- Place your tray in the oven and bake for 15-20 minutes or until golden brown.
- While your rolls are baking, mix powdered sugar and milk in a small bowl until smooth and creamy.
- Once the cinnamon roll bites are done baking, let them cool slightly, then drizzle with the glaze before serving warm.
