Ingredients
  

For the Dough
  • 1 cup warm water (about 110°F) Important to activate the yeast.
  • 2 tablespoons granulated sugar
  • 1 packet active dry yeast (about 2¼ teaspoons) Ensure yeast is fresh.
  • 4 cups all-purpose flour Can substitute with gluten-free flour.
  • 1 teaspoon salt
  • 1/4 cup baking soda Used for boiling bath.
  • 1/4 cup melted butter For brushing before baking.
For Coating
  • 1/2 cup granulated sugar (for coating)
  • 2 tablespoons ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 425°F (220°F) and grease a baking sheet.
  2. In a bowl, combine warm water, granulated sugar, and yeast. Let sit for 5-10 minutes until frothy.
  3. In a separate bowl, mix flour and salt. Add the frothy yeast mixture and stir until it forms a dough.
  4. Transfer dough to a floured surface and knead for 5-7 minutes until smooth and elastic.
  5. Cut the dough into small pieces and roll into pretzel shapes or bite-sized balls.
  6. Boil 4 cups of water in a large pot and carefully add baking soda.
  7. Drop pretzel bites into boiling water for 15-30 seconds, turning halfway through. Remove with a slotted spoon and place on the greased baking sheet.
  8. Brush bites with melted butter, mix sugar and cinnamon, and sprinkle generously over the top.
  9. Bake in the preheated oven for 12-15 minutes until golden brown.
  10. Let them cool slightly before enjoying them warm.

Notes

For gluten-free options, replace all-purpose flour with a gluten-free flour blend. Make sure the yeast is fresh for proper rising.
