Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, ground cinnamon, baking soda, and salt.
- In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy for about 2-3 minutes.
- Crack in the egg, add the vanilla extract, and stir until combined.
- Gradually add the dry ingredients to the wet mixture and mix gently until everything comes together.
- Stir in the cooled brewed coffee until evenly incorporated.
Baking
- Using a tablespoon or cookie scoop, drop round tablespoons of dough onto a parchment-lined baking sheet, leaving space between each cookie.
- Bake for 10-12 minutes until the edges are golden and centers remain soft.
- Remove from the oven and let cool on the baking sheet for a couple of minutes before transferring to a wire rack.
