  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed

  • 1/4 cup brewed coffee, cooled Adds flavor to the cookies

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, ground cinnamon, baking soda, and salt.
  3. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy for about 2-3 minutes.
  4. Crack in the egg, add the vanilla extract, and stir until combined.
  5. Gradually add the dry ingredients to the wet mixture and mix gently until everything comes together.
  6. Stir in the cooled brewed coffee until evenly incorporated.
Baking
  1. Using a tablespoon or cookie scoop, drop round tablespoons of dough onto a parchment-lined baking sheet, leaving space between each cookie.
  2. Bake for 10-12 minutes until the edges are golden and centers remain soft.
  3. Remove from the oven and let cool on the baking sheet for a couple of minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them for up to three months, separated with parchment.
