  • 1 cup brown sugar, packed Use light or dark brown sugar as desired.
  • ½ cup granulated sugar
  • 2 large eggs At room temperature.
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, baking soda, ground cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined, avoiding overmixing.
  6. Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, refrigerate but note it may alter texture. Reheat in microwave for about 10-15 seconds before serving.
