  • 2 large eggs

For the crumb topping
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a bowl, toss the chopped apples with lemon juice, sugar, and cinnamon. Set aside.
Batter and Layering
  1. In a large bowl, beat the softened butter and granulated sugar together until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  2. In a separate bowl, mix together the flour, baking powder, cinnamon, and salt. Gradually add the dry mixture into the wet mixture, alternating with milk. Mix until just combined.
  3. Pour half of the cake batter into the prepared pan. Spread the spiced apple mixture evenly over the batter, then pour the remaining batter on top.
Crumb Topping and Baking
  1. In a separate bowl, combine the flour, brown sugar, melted butter, and cinnamon to create crumbles. Sprinkle this topping evenly over the cake batter.
  2. Place the pan in your preheated oven and bake for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
