  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Additional Ingredients
  • 2 cups peeled and diced apples (e.g., Granny Smith)
  • 1/2 cup chopped walnuts or pecans (optional) Adds texture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, and salt. Set aside.
  3. In a large mixing bowl, cream the softened unsalted butter with granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then mix in the vanilla extract.
  5. Gradually add the dry mixture to the wet mixture and stir until just combined.
  6. Gently fold in the diced apples and optional chopped walnuts or pecans.
  7. Grease a 9x5 inch loaf pan or line it with parchment paper.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store wrapped tightly in plastic wrap or aluminum foil for up to 3 days at room temperature, or refrigerate for up to a week. For longer storage, freeze wrapped securely.
