Ingredients
  

Vegetables
  • 2 cups green cabbage, shredded
  • 1 cup purple cabbage, shredded
  • 1 cup carrots, shredded
  • 1/2 cup cilantro, chopped
Dressing
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon honey

Method
 

Preparation
  1. Start with fresh green cabbage and purple cabbage. Using a sharp knife or a mandoline slicer, shred the cabbages and carrots finely. Add them to a large mixing bowl.
  2. Roughly chop the cilantro and toss it into your bowl of veggies.
  3. In a separate small bowl, combine the lime juice, olive oil, honey, salt, and pepper. Whisk these together until fully mixed.
Mixing
  1. Pour the dressing over the shredded vegetables. Using tongs or two forks, mix everything until the veggies are well-coated.
  2. Sample a bite and adjust seasoning with more salt, pepper, or lime juice if desired.
Serving
  1. Let it sit for about 10 minutes in the fridge for the flavors to meld. Then serve with your favorite tacos, grilled chicken, or simply enjoy it on its own!

Notes

Substitutions: Consider adding diced bell peppers or mango chunks for a fruity flair. Make this slaw ahead of time to let the flavors deepen—up to 24 hours is recommended. Avoid over-dressing to prevent sogginess.
