  • 1 cup long-grain white rice
  • 2 cups vegetable broth or water
  • 1 tablespoon olive oil
  • 1 Juice of 1 lime
  • 1 Zest of 1 lime
  • 1/2 cup fresh cilantro, chopped
  • to taste Salt

Method
 

Preparation
  1. Rinse the long-grain white rice under cold water until the water runs clear to remove excess starch.
  2. In a medium-sized pot, bring 2 cups of vegetable broth (or water) to a boil. Add the rinsed rice and a pinch of salt. Lower the heat to a simmer, cover the pot, and cook for about 15-18 minutes or until tender.
  3. Remove from heat, let it sit covered for 5 minutes, then fluff the rice with a fork.
Flavoring
  1. Stir in the olive oil, lime juice, lime zest, and chopped cilantro. Adjust seasoning with more salt or lime juice if needed.
  2. Serve warm, garnished with extra cilantro if desired.

Notes

Use fresh cilantro and lime juice for the best flavor. Consider substituting with quinoa or brown rice for a healthier twist. Enjoy immediately, but leftovers can be stored in an airtight container in the fridge for up to 4 days.
