Preparation
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until it resembles wet sand. Press this mixture firmly into the bottom of a greased 9×9-inch baking pan.
- In a large bowl, beat the softened cream cheese until smooth. Add in 1 cup sugar and vanilla extract, mixing until fully incorporated.
- Beat in the eggs, one at a time, ensuring everything is well blended.
- Gently fold in 1 teaspoon of cinnamon into the cheesecake mixture.
Baking
- Pour the cheesecake filling over the graham cracker crust. Bake for about 25-30 minutes, or until the center is set and a bit jiggly.
- While the bars are baking, mix together 1/4 cup sugar and 1 tablespoon cinnamon in a small bowl.
Cooling and Serving
- Once baked, let the cheesecake cool at room temperature before sprinkling the cinnamon-sugar topping generously over the surface.
- Refrigerate for at least a couple of hours, allowing it to set completely. Once chilled, slice into bars and enjoy!
Notes
Store your Churro Cheesecake Bars in an airtight container in the refrigerator for up to a week. For longer storage, freeze them for up to 3 months. Thaw in the refrigerator overnight and allow to sit at room temperature for about 15-20 minutes before serving.
