  • 8 oz fresh mozzarella cheese, diced Cut into small cubes.
  • ½ cup fresh basil leaves, roughly chopped Preferably fresh for better aroma.
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Preparation
  1. Wash the peaches thoroughly. Chop them into bite-sized pieces, and set them aside.
  2. Cut the fresh mozzarella into small cubes, ensuring each piece is about the same size as the peach chunks.
  3. Roughly chop your fresh basil leaves.
Mixing
  1. In a large mixing bowl, gently toss the chopped peaches, mozzarella, and basil together.
  2. Drizzle the olive oil and balsamic vinegar over the salad, and gently mix to help all flavors intermingle.
  3. Sprinkle with salt and pepper according to your taste and give it one last gentle toss.
  4. Serve immediately, best enjoyed fresh.

You can store leftovers in an airtight container for up to one day. Wait to add the dressing until you're ready to serve to maintain the ingredients' texture.
