  • 1 cup grated zucchini (about one medium-sized zucchini) Squeeze out excess moisture before adding.
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1/2 cup vegetable oil Can substitute with applesauce for a healthier option.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional) Highly recommended for extra chocolate flavor.

Method
 

Preparation
  1. Wash and grate the zucchini using a box grater or food processor. Set it aside.
  2. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  3. In a large mixing bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
  4. In another bowl, combine sugar and vegetable oil, then add eggs and vanilla extract, whisking until fully incorporated.
  5. Gradually add the dry ingredients to the wet ingredients and mix gently until just combined.
  6. Fold in the grated zucchini and chocolate chips.
Baking
  1. Pour the batter into the prepared loaf pan and bake for about 50 minutes, or until a toothpick comes out clean.
Cooling
  1. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  2. Slice and enjoy!

Notes

Squeeze out excess moisture from grated zucchini before mixing. For added spice, consider adding 1/2 teaspoon of cinnamon.
