Preparation
- Wash and grate the zucchini using a box grater or food processor. Set it aside.
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large mixing bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
- In another bowl, combine sugar and vegetable oil, then add eggs and vanilla extract, whisking until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients and mix gently until just combined.
- Fold in the grated zucchini and chocolate chips.
Baking
- Pour the batter into the prepared loaf pan and bake for about 50 minutes, or until a toothpick comes out clean.
Cooling
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Slice and enjoy!
Notes
Squeeze out excess moisture from grated zucchini before mixing. For added spice, consider adding 1/2 teaspoon of cinnamon.
