Ingredients
  

Dry Ingredients
  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
Wet Ingredients
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened Can be replaced with coconut oil for a dairy-free option.
  • 1 large egg
  • 1 tsp vanilla extract
Optional Toppings
  • to taste chocolate chips or sprinkles For topping the cookies.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, stirring until well combined. If desired, fold in chocolate chips.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake in your preheated oven for 10-12 minutes. The cookies will look soft but will firm up as they cool.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store cooled cookies in an airtight container at room temperature for up to a week or freeze for longer storage. To freeze, layer parchment paper between cookies in a freezer-safe container.
