Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In another bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients, stirring until well combined. If desired, fold in chocolate chips.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake in your preheated oven for 10-12 minutes. The cookies will look soft but will firm up as they cool.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Store cooled cookies in an airtight container at room temperature for up to a week or freeze for longer storage. To freeze, layer parchment paper between cookies in a freezer-safe container.
