Preparation
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, and continue to beat until well combined.
- In another bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, mixing until a dough forms.
- Cover the dough with plastic wrap and refrigerate for about 1 hour.
Baking
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out the chilled dough on a lightly floured surface to about 1/4-inch thickness.
- Use a cookie cutter to cut out desired shapes and place them on the prepared baking sheets.
- Bake for 12 to 15 minutes or until the edges are firm. Allow them to cool on wire racks.
Filling and Assembly
- In a medium bowl, mash fresh raspberries and mix in the powdered sugar and raspberry jam until smooth.
- Once the cookies are cooled, spread a generous amount of raspberry filling on the flat side of one cookie and top it with another cookie.
- Press gently to adhere and serve fresh.
Notes
Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 2 months. Thaw at room temperature or microwave for about 10 seconds.
