- In a microwave-safe bowl, add the chocolate chips. Heat in the microwave for 30 seconds, stir, and repeat until melted and smooth (about 1 minute). Allow it to cool slightly.
- In a separate mixing bowl, whip the heavy cream using a handheld mixer or whisk until it starts to form soft peaks (around 1 minute).
- Add the melted chocolate, sugar, and vanilla extract to the whipped cream. Gently fold the mixture until fully combined, being careful not to deflate the whipped cream.
- Spoon the mousse into individual serving dishes and refrigerate for a few minutes if desired. Garnish with your favorite toppings just before serving.
Notes
If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Reheating is not necessary since it is enjoyed chilled; stir lightly if it settles.
