Ingredients

For the Brownies
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted Halal-certified if necessary
  • 2 large eggs
  • 1 teaspoon vanilla extract Halal
  • 1/3 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
For the Mint Frosting
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk or non-dairy milk
  • 1 teaspoon peppermint extract Halal
  • Green food coloring optional
For Topping (Optional)
  • Crushed chocolate cookies or mint candies For added crunch

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  2. In a mixing bowl, combine the granulated sugar and melted butter. Stir until well blended. Next, add the eggs and vanilla extract, mixing until smooth.
  3. Sprinkle the cocoa powder, flour, salt, and baking powder over the wet ingredients. Gently fold until just combined. Avoid overmixing to preserve that fudgy texture!
Baking
  1. Pour the brownie batter into the prepared baking dish, spreading it evenly. Bake for about 20-25 minutes, or until a toothpick inserted comes out mostly clean with a few moist crumbs.
Mint Frosting
  1. While the brownies are baking, prepare the mint frosting by beating the softened butter until creamy. Gradually add in the powdered sugar and continue mixing.
  2. Pour in the milk and peppermint extract (and a few drops of green food coloring if you like). Mix until smooth and fluffy.
Final Steps
  1. Once the brownies have cooled completely, spread the mint frosting over the top using a spatula. For added crunch, sprinkle crushed cookies or candies on top.
  2. Slice the Chocolate Mint Brownies into squares, serve them up, and watch the smiles grow!
