  • 3 pieces ripe bananas The riper, the better for flavor and moisture.
  • 1/2 cup melted butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 2 tablespoons espresso powder Can substitute with strong coffee.
  • 1/2 cup chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas using a fork until smooth.
  3. Add melted butter to the mashed bananas and mix until well combined. Then, stir in the granulated sugar, brown sugar, beaten egg, and vanilla extract until mixed.
  4. In another bowl, combine the baking soda, salt, all-purpose flour, cocoa powder, and espresso powder. Mix until well blended.
  5. Gradually add the dry ingredients to the wet banana mixture, mixing just until no flour streaks remain. Be careful not to overmix!
  6. Gently fold in the chocolate chips until evenly distributed within the batter.
  7. Transfer the batter to the prepared loaf pan and smooth the top.
Baking
  1. Bake for 60 minutes or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, tent it with aluminum foil.
  2. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

Serve with a spread of butter, powdered sugar, or melted chocolate for an extra treat. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
