Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, mash the ripe bananas using a fork until smooth.
- Add melted butter to the mashed bananas and mix until well combined. Then, stir in the granulated sugar, brown sugar, beaten egg, and vanilla extract until mixed.
- In another bowl, combine the baking soda, salt, all-purpose flour, cocoa powder, and espresso powder. Mix until well blended.
- Gradually add the dry ingredients to the wet banana mixture, mixing just until no flour streaks remain. Be careful not to overmix!
- Gently fold in the chocolate chips until evenly distributed within the batter.
- Transfer the batter to the prepared loaf pan and smooth the top.
Baking
- Bake for 60 minutes or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, tent it with aluminum foil.
- Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
Serve with a spread of butter, powdered sugar, or melted chocolate for an extra treat. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
