Preparation
- Preheat your oven to 350°F (175°C) and grease or line a muffin tray with paper liners.
- In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine milk, vegetable oil, egg, and vanilla extract. Mix until well combined.
- Gradually pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are perfectly fine!
- Gently fold in the chopped strawberries, ensuring they are evenly distributed throughout the batter.
- Spoon the batter into the prepared muffin tray, filling each cup about two-thirds full.
- Top each muffin with chocolate chips, pressing them lightly into the batter.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tray for a few minutes before transferring them to a cooling rack. Enjoy warm or at room temperature.
Notes
To keep your muffins fresh, store them in an airtight container at room temperature for up to three days. They can be frozen for up to three months. Reheat in the microwave for 15-20 seconds or in an oven at 350°F for about 5 minutes.
