  • 1.75 cups sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Important for moisture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine all-purpose flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk well.
  3. Add eggs, whole milk, vegetable oil, and vanilla extract. Mix on medium speed until smooth, scraping down the sides as necessary.
  4. Carefully stir in the boiling water; the batter will be runny.
Baking
  1. Pour the batter into a greased cake pan and bake for 30-35 minutes, checking for doneness with a toothpick.
  2. Let the cake cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

For gluten-free, substitute all-purpose flour with gluten-free flour. Keep an eye on the cake during the last few minutes of baking to ensure it doesn't overbake.
