Ingredients
  

Dry Ingredients
  • 2 cups rolled oats
  • 1 cup shredded coconut
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup honey or maple syrup Optional to substitute with agave syrup.
  • 1/4 cup coconut oil Melt before mixing.
  • 1 teaspoon vanilla extract
Optional Ingredients
  • 1/2 cup nuts or seeds Optional, based on preference.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine rolled oats, shredded coconut, cocoa powder, and salt.
  3. In a small pot over low heat, melt the coconut oil, then add honey (or maple syrup) and vanilla extract, stirring to combine.
  4. Pour the wet ingredients over the dry mixture and toss until the oats are evenly coated.
  5. Line a baking sheet with parchment paper and spread the granola mixture evenly across it.
  6. Bake for about 15-20 minutes, stirring halfway through, until golden brown.
  7. Allow the granola to cool completely on the baking sheet before transferring to an airtight container.

Notes

Store in an airtight container at room temperature for up to two weeks. For longer storage, refrigerate for up to a month or freeze for three months.
