  • 3 large eggs All ingredients should be at room temperature
  • 1 teaspoon vanilla extract
Add-ins
  • 1/2 cup chocolate chips Semi-sweet or dark chocolate chips work well

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with butter or cooking spray.
  2. In a medium bowl, combine flour, baking powder, and salt.
  3. In a large mixing bowl, beat together the ricotta cheese, melted butter, sugar, eggs, and vanilla extract until fluffy and well combined.
  4. Gradually add the dry ingredients into the wet mixture to avoid lumps.
  5. Gently fold in the chocolate chips with a spatula.
  6. Transfer the batter to your prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  8. Remove from the oven and let it cool for about 10 minutes before transferring to a wire rack. Slice, serve, and enjoy!

Notes

For substitutions, consider using almond flour for a gluten-free version or non-dairy ricotta for lactose-free. Store in an airtight container in the refrigerator for up to 5 days and freeze slices for up to 2 months.
